homemade jalepeños (for bottling)


these turned out so well!  i made up a big pot and canned it in the cutest little 4 oz. jars, just perfect for a burrito lunch. the jars are so colorful and pretty and they taste just like the store bought jalepeños. i will definitely be making a batch of these up every year. it was super simple to throw together, almost free, (thanks to cousin rusty for the chiles!) and taste sooo good.

1 cup vinegar
1/4 cup water
1 Tablespoon oil
1 teaspoon salt
1 teaspoon oregano
jalapenos, whole or sliced
carrots, sliced
onions, sliced
1 bay leaf
peppercorns
Heat mixture to boiling. Pack hot mixture into jars. Water bath 10 minutes.

*i multiplied this recipe by about ten and filled the hot liquid with jalapenos, sliced onion and carrot. i used one bay leaf for the whole pot. i made sure each cute little jar had a couple of peppercorns. the jalepeños are delish, but a teensy bit heavy on the oregano, i will cut that back a little bit next batch.

*please.wear.gloves~ or plan on not removing your contacts for at least two days. or scratching your face. (or have it your way, tough guy, face 'em with no gloves and have burning fire hands for a few days.)
